Cod Fish, Asparagus, Lemon, Parmesan and Quinoa

During a busy week, it can be helpful to have some easy meals on hand. In the most recent grocery haul, I shared that I got some ingredients to pair together: cod fish, asparagus, lemon, parmesan, and quinoa. As I'm typing this, I currently have some codfish, butter, lemon and asparagus cooking in a skillet - and in a pot, I have some quinoa cooking. Overall, it's a quick process that results in an easy, nourishing, and delicious meal. If you don't like fish, don't worry - just replace it with chicken (hint: an organic rotisserie chicken would be a quick option)!


What You'll Need:


- 8 oz. cod fish (I like to buy frozen, will caught)

- 1/2 lb. asparagus

- 1 tbsp. butter (look for grass-fed)

- half of a lemon

- 2 oz. parmesan

- 1 cup dry quinoa


How to Make It:


In a skillet, place cod fish, butter, 1 tbsp. water on medium heat. Place washed and chopped asparagus on top of fish, and allow to cook for 10 minutes, or until fully cooked. Use a meat thermometer to ensure fish is fully cooked.


In a pot, cook quinoa according to package directions.


Once both items are done cooking, place quinoa in a bowl, top with fish + asparagus, and parmesan. Top with cracked pepper, sea salt, and any other desired seasonings.
