5 Easy Recipes Using What You Have on Hand: Chicken, Basmati Rice and Spinach
Chicken and Spinach Basmati Rice Bowl: Cook 1 cup of basmati rice according to package instructions. While the rice is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 diced chicken breast and cook until browned. Add 1 minced garlic clove, 1 teaspoon of ground cumin and 1 teaspoon of paprika, and cook for an additional minute. Stir in 2 cups of spinach and cook until wilted. Serve the chicken and spinach mixture over the cooked basmati rice.
