Cassava Tortillas

As promised (I mentioned this recipe in a Q&A), here is the delicious tortilla recipe. They're delicious, inexpensive and fairly easy addition.


Ingredients:


  • 1 cup cassava flour

  • 1/4 tsp flake salt

  • 1/4 tsp aluminum free baking soda

  • 1/2 tsp cream of tartar

  • 2 tbsp palm shortening

  • 2/3 cup warm (filtered if possible) water


Instructions:


  • First, add dry ingredients and mix together

  • Add the palm shortening and knead into the dry ingredients for about 2 minutes

  • Add the warm water and knead together for 2-3 minutes. The dough will be fairly sticky, but then the flour will help adjust the consistence.

  • When you have a mound of dough, roll it into a log shape in the bowl (like a tube of cookie dough). Then, slice it into 6 pieces. Take each piece and roll into a ball.

  • If you have a tortilla press, take each ball of dough, place it between two pieces of parchment paper and press into a flat tortilla. If you do not have a press, use parchment paper and roll dough between two pieces with a rolling pin or a food can (if you do not have a rolling pin).

  • Heat a pan or flat griddle on medium-high heat. Be cautious, as oil can get very hot, splatter, and burn.

  • Eat immediately or freeze in batches for the future.

  • Enjoy!
