Bone Broth Ramen
Ingredients: 1 Lotus Foods brown rice ramen, 2-3 cups bone broth, 1 small to medium chicken breast, 1 tbsp ghee, 2-3 small shiitake mushrooms, 1 small zucchini, 1 small/medium carrot, ¼ c purple cabbage (option to substitute baby bok choy), green onions, red pepper flakes, fresh cilantro, salt & pepper to taste.
Instructions: Begin by cutting your chicken breast into small bite-sized pieces. Season with salt & pepper and cook over the skillet in ghee. Flip the chicken pieces to cook on the other side and add in the vegetables. While that is cooking, boil your noodles in water according to package instructions. Once the noodles are done and the vegetables are tender, combine in a bowl with bone broth. Top with fresh herbs, salt & pepper, and dig in!
