Sun-dried tomato meatballs with Banza Noodles

This delicious recipe makes about 2 servings.

You will need: 2 tsp olive oil, 2 cups spinach, 6 oz organic ground turkey, 1⁄3 cup panko bread crumbs, 3 tbsp sun-dried tomatoes, 1⁄2 tsp garlic powder, 1⁄4 cup shredded parmesan cheese,1 pasture raised egg, 4 oz Banza noodles


1. Preheat oven to 425 degrees F. Place a skillet over medium- high heat and add olive oil. Add spinach and let wilt 1 minute. 2. Mix ground turkey, panko, sun-dried tomatoes, garlic powder, parmesan, egg and 1 cup spinach together in a bowl. Season with salt and pepper. Form into balls about the size of golf balls. 3. Put meatballs on baking sheet lined with foil. Bake 25 minutes or until meatballs begin to brown. 4. Meanwhile, cook spaghetti to al dente according to package instructions. Drain and add to a bowl with remaining 1 cup spinach, a pinch of salt, and a little extra olive oil, tossing to coat. Top with cooked meatballs and extra parmesan if desired.
