Steak and Feta Quesadillas
This quesadilla only takes about 20 minutes and can make about 4 servings.
You will need: 2 cups spinach, ½ cup green olives, 2 tbsp olive oil, 12 oz grass-fed top sirloin steak sliced into strips, ½ cup cream cheese, ½ cup feta, 4 whole grain wrap - 10" sizes
1. Coarsely chop spinach. Chop green olives.
2. Heat olive oil in a skillet over medium-high heat. Season sirloin with salt and pepper, then add to the skillet. Cook 5 minutes, turning occasionally, until browned. Add spinach, cream cheese, feta and green olives. Cook 2 minutes more to melt. Transfer mixture to a bowl.
3. Lie wrap on a flat surface and cover one side with filling; fold the other half over. (Repeat with remaining tortillas if needed.)
4. Wipe the skillet clean with paper towels. Add quesadillas (working in batches if needed) and cook 3 minutes per side, or until browned.
