Spiced honey-glazed chicken thighs with slaw

This delicious meal takes about 40-50 minutes and makes two servings!


You will need: ⅓ red cabbage, ⅓ red onion, ½ cup chopped cilantro, 1 tsp salt, 1 lime, 1 tbsp olive oil, 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, 4 free range chicken thighs, 2 tbsp honey, 1 tbsp apple cider vinegar


Cooking Instructions:

1. Place a rack in the top third of the oven. Preheat oven broiler on high. Line a rimmed baking sheet with aluminum foil.

2. Thinly slice red cabbage, red onion and cilantro leaves. Combine these with the remaining salt, 2 tbsp lime juice, and olive oil in a large bowl and toss well. Let it steep for 10 minutes in the fridge.

3. Meanwhile, combine chili powder, half the salt, cumin and paprika in a large bowl. Add chicken thigh and toss to coat. Place on the prepared baking sheet and broil 5 minutes on each side.

4. Combine honey and apple cider vinegar in a small bowl. Remove pan from oven and brush half of the honey mixture on chicken thigh. Broil 2 minutes. Flip chicken thigh and brush with the remaining honey mixture. Broil an 2 additional minutes, or until juices run clear and inside is no longer pink.

5. Serve slaw on the side
