Root Veggie + Chicken and Herb Skillet Dinner

What You'll Need:

- 2 lbs. organic chicken breast (or chicken thighs)

- Organic milk (regular or coconut milk)

- Mushroom broth (Pacifica brand)

- 1 purple sweet potato

- Tri colored carrots

- Organic mushrooms (12 oz.)

- Organic herbs (sage, rosemary, thyme)

- Grass-fed butter (Vital Farms brand, Organic Pastures or Kerrygold)

How to Make it:

  1. Marinade chicken in 2 cups of milk + 2 cups mushroom broth, sprinkle with salt (at least 1/4 tsp), add herbs on top

  2. In a buttered skillet on medium, begin cooking chicken after marinading for 15 minutes

  3. While chicken begins cooking, chop washed potatoes, carrots and mushrooms

  4. In separate pot, steam carrots, potatoes and mushrooms

  5. When veggies have cooked, add to the cooked chicken in the pan (slice chicken if desired and add back into skillet)

  6. Add grass-fed butter to pan (2 TBSP)
