Jalapeños are rich in vitamins A and C and potassium. They also have carotene -- an antioxidant that may help fight damage to your cells – as well as folate, vitamin K, and B vitamins. Many of their health benefits come from a compound called capsaicin. That's what makes the peppers spicy. One of my favorite ways to utilize jalapenos is in jalapeno poppers - below, you can try out my favorite recipe.
INGREDIENTS:
6 fresh, medium-sized jalapenos
1/2 cup finely shredded chicken or beef
1/3 cup organic cheddar cheese
5 strips pastured bacon, cut in half (lengthwise)
10 toothpicks
1/2 tsp smoked paprika
INSTRUCTIONS:
Cut the jalapeños in half lengthwise, and scoop seeds out + save for other purposes, or throw away.
In a bowl, combine your meat of choice Mix until well combined.
Stuff jalapenos, and preheat oven to 400 degrees. Place the prepared jalapeños on a parchment paper lined baking sheet. Bake for 20-25 minutes until bacon is crispy and browned. Serve immediately.
