Power Balanced Bowl ( Quick & Easy)
I love this recipe because it's a quick and easy way to have a balanced meal. You really get a fantastic proportion of protein, carbs, and fat. Fix this for breakfast, lunch, or dinner!
You will need: 3 oz organic free range Chicken, diced 2 cage free eggs, red pepper, 1 cup spinach, 1 cup cooked quinoa, 1/2 tsp pink salt, 1 tsp pepper, ½ tbsp virgin olive oil, Avocado (optional), chives (optional)
Place olive oil in pan and heat over medium heat.
Add diced red pepper and spinach to pan and cook until peppers are soft and spinach is wilted.
Add chicken and cook thoroughly.
Add 2 eggs and stir continuously while cooking.
Add cooked quinoa.
Add salt and pepper.
Place in a bowl and serve.
Optional: Sub out one of the eggs for HALF an avocado. Just add the sliced avocado on top of the bowl after cooking. Or if you REALLY love avocado, drop in the whole avocado and add in 1/4 cup of cage free egg whites instead of 2 whole eggs.
