Lemon Raspberry Baked Oats



Ingredients:

2 c One Degree sprouted rolled oats (these can be swapped for quinoa flakes)

2 c light coconut milk

1 cup raspberries

Zest from 1 large lemon

Juice from 1 large lemon

1 tsp baking powder

1 tbsp poppyseeds

2 tsp cinnamon

1/3 c pure maple syrup

2 tsp pure vanilla bean extract

8 scoops collagen peptides (or 4 servings according to container)

2 eggs


Optional yogurt "icing":

4 tbsp lactose free greek yogurt

1 tbsp pure maple syrup

1 tsp lemon zest

4 tsp fresh lemon juice

1 tsp vanilla extract


Instructions:

  • Preheat the oven to 350

  • Combine the dry ingredients in a large bowl and the wet ingredients in a medium bowl. Add the wet mixture to the dry mixture and then add in the apples

  • Pour the mixture into a greased 8x8 baking dish and bake uncovered for 35-45 minutes

  • If making the yogurt icing, mix all ingredients in a bowl and ad on top of oats once cooled
