Delicious Roasted Salmon Recipe
You will need: 1 lb wild caught salmon, organic wild rice, 1 tsp cumin, 1 tsp ground coriander, 1 tsp smoked paprika ,1 lime, 2 cucumbers, 1 avocado, 1 plum ,1 shallot, 1/2 Jalapeño pepper, 3 1/2 tbsp chopped cilantro
Preheat oven to 425 degrees F. Place salmon on a baking sheet lined with foil and season with salt.
Start cooking wild rice
Mix cumin, ground coriander, smoked paprika, half the lime juice and a pinch of salt together. Rub the mixture onto salmon.
Roast salmon in the oven 13 to 15 min, until cooked through but still flaky and pink in the middle.
Meanwhile dice cucumber, avocado, plum and shallot. Mince Jalapeño pepper and chop cilantro. Mix all these in a bowl with remaining lime juice and salt to taste. Serve relish alongside fish on top of wild rice.
