Collagen Protein Waffles
Sometimes you just need a sweet, yet protein filled breakfast, snack, or dessert - at least I know that I do. These protein waffles are the perfect fit, and even better with whip cream, strawberries, cinnamon and organic powdered sugar on top.
2 organic eggs
1/4 cup purified water
1 cup organic milk
2 tsp apple cider vinegar
1 tsp pure vanilla extract
1/4 cup pure maple syrup
1/4 cup coconut oil
1 1/2 cup cassava flour
1 cup tapioca flour
1/4 cup collagen peptides
1 tbsp aluminum free baking powder
1/2 tsp organic cinnamon
Whisk together all of the wet ingredients and set aside to let rest at room temperature for at least 10 minutes.
In a separate bowl, combine all of the dry ingredients and stir until smooth.
dd half of the wet mixture to the dry mixture and stir until well combined. Add the remaining wet mixture and continue stirring until well combined and smooth.
Preheat waffle iron to medium-low heat.
When the waffle iron is hot, spray with non-stick cooking spray. (I suggest coconut oil) Pour batter and cook according to your waffle irons instructions.
Serve with whatever topping you're craving! I like fresh cut strawberries, whipped cream, chocolate chips and powdered sugar.
