Breakfast Hash with Parsnip + Apple + Bacon

Switch up your breakfast options with this nourishing, satisfying breakfast recipe. Try it with or without the cinnamon - it's up to you if you want the added flair. Try it with eggs on the side for a complete breakfast!

Here's what you'll need:

  1. 2 organic, pastured bacon strips (can swap with turkey bacon)

  2. 1 organic honey crisp apple

  3. 1/2 parsnip

  4. 1/4 cup organic spinach

  5. 1/4 tsp cinnamon

  6. 1/4 tsp garlic

  7. Salt as needed

How to make it:

- Cook bacon, dice and set aside

- Dice apple, chop parsnip

- Add parsnip + apple to skillet and cook for 5 minutes, add spinach and cook until veggies + fruit is soft and wilted

- Once cooked, add garlic, cinnamon, salt and add bacon back into mixture, cooking for one entire minute

Tip: if you like this for breakfast, you can make a large serving at once by tripling the recipe + storing in a glass container in the fridge.
