I get it - life gets busy, and sometime you just need an easy and nourishing option to eat at home. This past weekend, I needed a quick and easy meal (with plenty of carbs, protein and savory veggies), so I came up with one of my favorite recipes to date.
In total, the cook time for this dish was about 12 minutes.

Ingredients:
- Lotus Foods Miso Gluten Free Noodles (2 packages)
- Bone broth, 32 oz.
- 10 oz. chicken cooked (I used organic rotisserie chicken, but you can use thighs or breast)
- 2 large carrots
- 4 broccolini stems
- 1 cup chopped celery
- 2 cups chopped baby bok choy
- 1/2 cup chopped green onions
Instructions:
- In a pot, boil 8 cups of water. When water is boiling, add noodles and cook for 4 minutes (until al dente)
- Remove noodles from pot and place in a bowl, and add bone broth to pot, add chopped veggies (besides green onions) and chicken, and boil for 4 minutes
- Add noodles in, along with seasoning packets from Miso noodes, add green onions, serve and enjoy!
